My Favourite Postpartum Banana Chocolate Chip Muffin Recipe

This is my first time writing out a recipe, so bear with me! Also, every time I make these muffins I make them differently!! Sometimes in the blender, sometimes with my kiddo, and sometimes with oats, avocados or extra ingredients for maximum postpartum nourishment!

Preheat your oven to 375 Degrees!

First, we're gonna create 2 flax eggs and put them in the fridge! My son is allergic to eggs so we use this substitute and it also helps prevent postpartum constipation 😉

2 flax eggs - mix well then put them in the fridge to set

2 tablespoons of ground flax

6 tablespoons of water

Now let’s gather the dry ingredients in another bowl!

The seeds are optional and so is being organic!

1 + 1/3 cup of Organic Flour

1 tsp. Baking Soda

1/2 tsp. Baking Powder

1/2 tsp. Sea Salt

Splashes of Cinnamon & Nutmeg

1.5 tbsp. Chia Seeds

1.5 tbsp. Flax Seeds

Now let's do the wet stuff! Go grab your muffin tins and spray or line them up too!

1 + 1/4 cup of Ripe Mashed Bananas

1/3 Cup of Avocado Oil

1/3 Cup of Apple Sauce

1/2 Cup of Maple Syrup

Splash of Vanilla Extract

Add in your flax egg!

Ok so now I FOLD them together! Do not overmix your muffins, they get stiff!!! Grab a spatula and if it’s dry, add a tablespoon of any liquid you have until they look right!

From here I usually double this recipe and it makes me two dozen big muffins and a tray of 36 little muffins. I love to bring little muffins to visits for families who have older kiddos, that way the moms can have the big muffins and the kids can have the little ones! Sometimes no sharing is caring!

Let me know if this muffin recipe works out for you and enjoy it! It’s my personal favourite and I have just built the recipe with guessing overtime 💕
